Chili

A vegetable-forward chili with a touch of dark chocolate, based on Adam Ragusea's recipe.

About

Based on Adam Ragusea’s chili. The dark chocolate rounds out the acidity — don’t skip it.

Preparation

  1. Dice the peppers and onion and sauté until softened.
  2. Add the crushed tomatoes, beans, mushrooms (if using), and spices.
  3. Simmer until thickened, then stir in the dark chocolate chips until melted.
  4. Adjust the seasoning — lime juice and a splash of white wine vinegar to brighten it — and finish with chives.
