Preparation
- Boil the rigatoni until al dente, reserving some pasta water.
- Brown the breakfast sausage with the rubbed sage, salt, and pepper.
- Whisk the eggs with the pecorino and 1 tsp freshly ground black pepper.
- Toss the hot drained pasta with the sausage off the heat, then add the egg mixture, loosening with pasta water until glossy and creamy.
- Toast the breadcrumbs with the parsley and ground pork rinds, and scatter over the top with the green onions.
