Breakfast Noodles

A breakfast-sausage carbonara with rigatoni, eggs, pecorino, and a crisp breadcrumb topping.

Preparation

  1. Boil the rigatoni until al dente, reserving some pasta water.
  2. Brown the breakfast sausage with the rubbed sage, salt, and pepper.
  3. Whisk the eggs with the pecorino and 1 tsp freshly ground black pepper.
  4. Toss the hot drained pasta with the sausage off the heat, then add the egg mixture, loosening with pasta water until glossy and creamy.
  5. Toast the breadcrumbs with the parsley and ground pork rinds, and scatter over the top with the green onions.
